Ok, let's do it. SPINACH DIP
You are hosting a party where a keto, gluten free, vegan and a soul food people have all accepted to come. thinking " DO I COOK NOW!??"
I present to you the appetizest of appetizers, a cashew spinach dip.
Blend together and bring to boil:
- 1 cup of cashews,
- 1/4 cup sunflower seeds + pine nuts... or more cashews if you feel basic today,
- 1 can of rinsed chickpeas (or any other white bean),
- 3 Tbsp of chives,
- 2 Tbsp of parsley,
- 2 Tbsp onion powder,
- 3 Tbsp Miso paste,
- 3 Tbsp lemon juice,
- 1/4-1/3 cup of nutritional yeast ( how cheesy do you want it? 😏),
Blend all the above again till smooth.
Good news is - you can deal with spinach in the same pot that just got emptied of the cashew-chickpea mix.
Throw a splash of H2O and as much spinach as your soul desires into it (3-8 cups; I ended up with about 8), and wait till spinach reduces in size... to add MORE spinach 🤣 (optional... I just love ma 🥦 greens).
Your blended cashew bean mix is ready to marry the sauteed spinach, so do that and salt + pepper + condiment to taste... I added ashwagandha cause @devidooda said it's good for me.
DONE! You get:
- a delicious crowd pleaser
- serve hot or cold
- packed with protein and fiber
- vegan AND low carb
