1. I&#039;d say leafy greens are optional and make it more fibrous and less kneady. Optional! I just add whatever the leafy greens are in my fridge, or for instance - beet greens if I got beets and just happen to have greens that are not going to be good for much else.
2. I don&#039;t knead mine AT ALL! But I also am not a fan of meaty seitan. So - knead away if you wish for it to be more stringy. Tying it in knots is an amazing way to get those meat-like fibers.]]></description>
