TVP Savory Granola

As some of you may know, I’m going to Costa Rica for Thanksgiving. And because my 2020 season competition prep started 1.5 months ago, I got to make sure there are enough various sources of vegan protein for me to eat on the go (the trip includes a lot of hiking). Last thing I want is to lose muscle. I’m bringing my DIY protein blend, of course, but that requires a shaker cup and some water. What if I just want a quick snack that is also portable and even lower maintenance than protein powder? Plus, I’m hoping the customs won’t take my protein away questioning what the hell is this large bag of white powder in the bag… but you never know 🙂

So, I made granola! The focus of this recipe is to be pretty macro friendly yet pack enough protein, and a good amount of fats + carbs to help through the long hiking trips / travel.

Ingredients
  • 5 cups dry TVP
  • 1 cup coconut shreds
  • 1/2 cup sesame seeds (or any other seed – hemp, pumpkin, sunflower)
  • 1/4 cup raisins / craisins
  • 2 Tbspn tahini (or any other nut / seed butter)
  • 2 Tbspn coconut oil
  • 1/4 cup soy sauce, or salty vegetable broth
  • 1/4 cup nutritional yeast
  • 1/4 cup maple syrup (or 1 teaspoon Now Better Stevia if you want lower carbs)
  • 1 Tbspn paprika
  • 3 Tbspn parsley
  • 1 Tbspn ginger
  • 1 Tbspn onion powder
  • 1 tspn tumeric
  • a pinch coriander, all spice, clove, nutmeg and whatever else your heart desires!
  • 1/2 cup water

TVP Savory Granola
Method

  • Preheat oven to 400F
  • Melt coconut oil and tahini together, add all other spices and mix well. If your tahini is dense, feel free to add a tad more coconut oil. Make sure there are no chunks of any one ingredient
  • add water to thin the mixture enough to cover all TVP
  • add 3-4 cups of TVP and mix well, let stand 5 min for TVP to rehydrate a little and absorb your seasoning
  • add the remaining cup of TVP, sesame seeds, coconut shreds and raisins
  • Line baking sheet with parchment paper and bake at 400F for 45 min stirring well half way through!
